The leaves are beginning to change color on the trees and the first cold and wet days should not be too far off. For this, you are well prepared with a delicious and warming vegetable broth. And homemade tastes even better, of course.
Preparation of the vegetable broth :
- Wash and coarsely chop carrots, root parsley and leek. Clean celery and cut into coarse cubes. Cut onion in half without peeling. Crush garlic with the flat side of a large kitchen knife until the skin pops. Wash and drain parsley, lovage and thyme. Tie herbs together with kitchen twine to make a small bouquet.
- In a large enough pot, heat vegetable oil and sauté carrots, celery and root parsley for about 5 minutes, stirring occasionally. Add leek, onion and garlic, sauté for 2 minutes and pour in 3 liters of water. Add bay leaves, juniper berries and the bunch of herbs and simmer with a lid on for 1 hour over low to medium heat. In this step you can also add scraps like the top part of the carrot.
- Drain vegetable broth through a sieve and season to taste with salt and pepper. For example, use as a base for vegetarian soups, various sauces recipes and the most beautiful stew recipes.
