Recipe for Vegetable Broth

The leaves are beginning to change color on the trees and the first cold and wet days should not be too far off. For this, you are well prepared with a delicious and warming vegetable broth. And homemade tastes even better, of course.

Preparation of the vegetable broth :

  1. Wash and coarsely chop carrots, root parsley and leek. Clean celery and cut into coarse cubes. Cut onion in half without peeling. Crush garlic with the flat side of a large kitchen knife until the skin pops. Wash and drain parsley, lovage and thyme. Tie herbs together with kitchen twine to make a small bouquet.
  2. In a large enough pot, heat vegetable oil and sauté carrots, celery and root parsley for about 5 minutes, stirring occasionally. Add leek, onion and garlic, sauté for 2 minutes and pour in 3 liters of water. Add bay leaves, juniper berries and the bunch of herbs and simmer with a lid on for 1 hour over low to medium heat. In this step you can also add scraps like the top part of the carrot.
  3. Drain vegetable broth through a sieve and season to taste with salt and pepper. For example, use as a base for vegetarian soups, various sauces recipes and the most beautiful stew recipes.
